Bourbon Glazed Meatloaf “Sandwich”

What You’ll Need:

For The Meatloaf

1 Tbsp Unsalted Butter

1 Cup Onion, Fine Dice

½ Cup Celery, Fine Dice

2 Cloves Garlic, Minced

4 Strips Bacon, Diced

1 Cup Shitake Mushroom, Chopped

1 lbs Wild Earth Texas 80/20 Ground Chuck

½ Cup Breadcrumb

1 Large Egg

1 Egg Yolk

½ Cup Ketchup

2 Tbsp Cola

1 Tbsp Bourbon

1 Tbsp Worcestershire

3 Tbsp TexJoy “Herbs du Beaumont”

Salt & Pepper to Taste

For the Glaze

½ Cup Ketchup

2 Tbsp Bourbon

½ Tbsp Soy Sauce

1 Tbsp Brown Sugar

For the Black Pepper Gravy

1 ½ Tbsp Unsalted Butter

1 Tbsp All-Purpose Flour

1 Cup Reserved Meatloaf Drippings

½ Cup Chicken Stock

1 Tsp Ground Black Pepper

½ Tbsp Lemon Juice

Salt to Taste

For the “Sandwich”

4 Slices Texas Toast (per serving)

1/2 Cup Mayo (preferably Dukes)

4 Thick Slices Tomato, sprinkled with TexJoy Steak Seasoning

4 Large Eggs

What You’ll Do:

  1. Preheat oven to 350 F
  2. Melt butter over medium heat in a large skillet. Add onions, celery and garlic cooking until translucent.
  3. Add Bacon and Mushroom cooking for another 4-5 minutes until soft.
  4. Transfer to a plate and let cool.
  5. Mix the beef, bread crumbs, egg, yolk, ketchup, bourbon, cola, Worcestershire, salt, Herbs du Beaumont, pepper and bacon medley then mix with hands until all the ingredients come together.
  6. Place beef mixture into a loaf pan and pack until evenly distributed.
  7. Mix all ingredients for the glaze together and brush onto the top of the loaf.
  8. Cook for about an hour in a 350 F oven.
  9. When meatloaf is finished cooking, carefully remove from oven and pour drippings into a measuring cup. (Should yield about a cup).
  10. Heat butter in a sauce pan. Once hot add the flour and whisk until smooth.
  11. Add the meatloaf drippings, chicken stock and black pepper whisking until it’s smooth and begins to thicken. Remove from heat and set aside.
  12. Heat a non-stick pan with a little oil and fry your eggs one at a time setting aside when cooked.
  13. Now for the Sandwich….
  14. Toast the bread. Place on plate and slather with Dukes Mayo.
  15. Top with 1 or 2 slices of meatloaf then top with 1 slice of Tomato.
  16. Cover with the black pepper gravy and top with a fried egg.
  17. Now dig in and Enjoy!!
