Bulgogi Sliders with Sriracha Mayo and Spicy Pickles

What You’ll Need:

For the Bulgogi

2 Lbs Prime Beef Sirloin, Sliced Very Thin

1 Cup Soy Sauce

½ Cup All Natural Apple Cider

3 Tbsp Sake

2 Tbsp Mirin

2 Tbsp Sugar

1 Tbsp Garlic, Minced

1 Tbsp Toasted Sesame Oil

1 Pear, Peeled, Cored and Pureed in Food Processor

1 Carrot, Cut Into Matchsticks

1 Medium Onion, Sliced Thin

For the Spicy Mayo

1 Cup Mayo (Preferably Dukes)

3 Tbsp Sriracha

1 Tbsp Soy Sauce

Green Onion Vinaigrette

1 Bunch Green Onion, green parts cut lengthwise to make thin ribbons

¼ Cup Soy Sauce

1 Tsp Sugar

1 Tsp Red Chili Flake

1 Tbsp Toasted Sesame Oil

2 Tbsp Rice Vinegar

1 Tbsp Mirin

1 Tbsp Sesame Seed

For the Slider

12 Slider Buns

Butter for the Buns

What You’ll Do:

  1. Mix all of the ingredients for the Bulgogi together in a bowl.
  2. Place the Beef, Carrot and Onion in the bowl and toss to coat. Let the meat marinade for at least 8 hours in the fridge.
  3. Meanwhile make the Spicy Mayo and Green Onion Vinaigrette (Note; toss the green onion in ¼ cup of vinaigrette just before serving). Set Aside
  4. Cook Meat by placing into a hot skillet until cooked through.
  5. Once the beef has been cooked, set aside to rest and toast the buns
  6. To serve coat the bottom bun with the Spicy Mayo then place a good amount of the Bulgogi on top. Toss the green onion ribbons in the vinaigrette and place a handful on top of the beef. Add a couple of pickle slices (if you’re into pickles) and then top with top bun.
  7. Enjoy!
