Miso Cacio e Pepe Japanese Udon Noodles

What You’ll Need:

30 oz Japanese Udon Noodles

8 Tbsp Unsalted Butter, cubed

2 Tbsp Fresh Ground Black Pepper

3 Tbsp Whit Miso Paste

3 oz Good Quality Parmesan, Grated

Salt

What You’ll Do:

  1. Bring a pot of salted water to a boil then boil the Udon according to the instructions on the package. Remove from water and strain, reserving a cup of the pasta liquid.
  2. Set a large sauté pan over medium heat and melt 6 Tbsp of butter. Add the pepper and stir for a few second or until fragrant.
  3. Add half of the reserved pasta water, then add the noodles. Give the mix a good stir to incorporate then add the remaining butter and miso paste. Stir until the miso is well combined with the noodles. If the mix gets too dry, add a bit more pasta water.
  4. Remove from heat and stir in the Parmesan. Once melted and fully mixed, serve in individual pasta bowls and top with a bit more cheese and black pepper.
  5. Enjoy!!
