Smoky Tomato and Lima Beans Topped With Truffle Ravioli

What You’ll Need:

1 Pack of Trader Joe’s Porcini Mushroom & Truffle Ravioli or your favorite pre-packaged ravioli

3 Tbsp Sunflower Oil

1 Sweet Onion

4 Garlic Cloves, Crushed

1 14.5 can of Diced Tomato

1 Tsp Sugar

2 Tsp Dried Oregano

2 Tsp Smoked Paprika

2 Tsp Hot Paprika

¼ Tsp Ground Cinnamon

2 15oz Can Lima Beans, Drained and Rinsed

¾ Cup Water

3 Tbsp Olive Oil

1 Tbsp Dill, Chopped

1 Tbsp Parsley, Chopped

2/3 Cup Crumbled Feta Cheese

Salt and Pepper to Taste

What You’ll Do:

  1. Heat olive oil in a large pan over medium low heat.
  2. Once hot, add the onion and cook for about 20 minutes or until the onions are very soft and begin to caramelize.
  3. Add the garlic then cook for another 2-3 minutes, then add the tomatoes, sugar, oregano, paprika, cinnamon and salt and pepper. Cover and simmer for 15 minutes.
  4. Meanwhile bring a pot of water to a boil and cook the ravioli per package directions, drain and set aside.
  5. Add the beans to the tomato mixture along with the water and another pinch of salt and cook covered for about 30 minutes or until the beans are very tender.
  6. Remove lid and stir in the olive oil and herbs and turn heat to low.
  7. In a small saute pan, heat another 2 tbps of oil over medium heat and then toast both sides of the ravioli being careful not to burn.

To Serve

  1. Spoon the bean and tomato mixture into a large bowl and then top with the ravioli.
  2. Drizzle with olive oil and garnish with a bit of chopped parsley.
  3. Enjoy!!
