Pitaquiles

What You’ll Need:

2 Pitas

¼ Cup Olive Oil

1 Tbsp Za’atar Spice (I prefer the Jamie Geller Za’atar Spice Mix)

Salt and Pepper to Taste

4 Cups Red and Orange Cherry Tomatoes

1 Medium Yellow Onion, Sliced Thin

6 Garlic Cloves

1 Whole Jalapeno, plus another half for sliced for garnish

1 Tbsp Fresh Lemon Juice

3 Large Eggs

½ Cup Feta, Crumbled

¼ Cup Greek Yogurt

2 Tbsp Fresh Cilantro, Chopped

What You’ll Do:

  1. Preheat over to 425F
  2. Lay the tomato, onion, garlic and jalapeno onto a baking sheet and coat with olive oil.
  3. Cut the pita into strips and lay onto a separate baking sheet. Coat with olive oil and season liberally with Za’atar.
  4. Once oven has pre-heated, place veggie’s in oven and roast for about 15-20 minutes or until the onion is slightly charred and the tomatoes begin to break.
  5. Place the pita into the oven when there is about 6-10 minutes left on the veg.
  6. Remove both and set aside to cool slightly.
  7. Place the tomato mixture into a blender, add the lemon juice, salt and pepper, then blend smooth.
  8. Pour mix into a 10-12 inch cast iron pan over medium heat.
  9. When mix begins to bubble up, add the pita and reduce the heat to low.
  10. In another pan, fry 3 eggs to desired doneness and then add to the top of the tomato mixture.
  11. Add a dollop of Greek yogurt randomly throughout the pan then sprinkle the feta, jalapeno and cilantro on top. Serve family style.
  12. Enjoy!!
